内容記述 | Osamu Shinoda (1899-1978) is known as a pioneer in the research on food habits in East Asia, and has left voluminous documents. National Museum of Ethnology has inherited his documents and book collection, which is called "Shinoda's document collection." The collection contains questionnaires on Japanese sushi-eating habits. They were sent out and collected between 1953 and 1968, which was just the period when traditional local food habits were being replaced by a national homogeneous habit. We have planned to convert those questionnaires into computerreadable form and analyze them with the following two objectives: 1) To survey the distribution of several types of sushi including narezushi and the domestic lifestyle in those days concerning eating. 2) To make Shinoda's data much more accessible to those who are interested in Japanese folklore and food habits. As a preliminary work, we input data of about 1300 questionnaires, one tenth of the entire volume, into a personal computer, and analyzed the data from several viewpoints. In this paper, we give several distribution maps of narezushi, inarizushi, makizushi, gomokuzushi, etc. Those distribution maps suggest the evidence of several cultural areas of sushi-eating in Japan. We also propose a new scheme for classification of sushi, which may hopefully help to resolve the confusion found in the past discussions on sushi. |
