{"created":"2023-06-20T15:59:23.935310+00:00","id":4608,"links":{},"metadata":{"_buckets":{"deposit":"865ba070-5617-44cd-b5f1-7b50ff017d12"},"_deposit":{"created_by":17,"id":"4608","owners":[17],"pid":{"revision_id":0,"type":"depid","value":"4608"},"status":"published"},"_oai":{"id":"oai:minpaku.repo.nii.ac.jp:00004608","sets":["345:496"]},"author_link":["8276"],"item_9_biblio_info_7":{"attribute_name":"書誌情報","attribute_value_mlt":[{"bibliographicIssueDates":{"bibliographicIssueDate":"1977-10-18","bibliographicIssueDateType":"Issued"},"bibliographicIssueNumber":"3","bibliographicPageEnd":"540","bibliographicPageStart":"498","bibliographicVolumeNumber":"2","bibliographic_titles":[{"bibliographic_title":"国立民族学博物館研究報告"},{"bibliographic_title":"Bulletin of the National Museum of Ethnology","bibliographic_titleLang":"en"}]}]},"item_9_description_4":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"Nut-bearing trees are common in the Japanese islands. \nIn Japan there are two main types of forest; deciduous forests in the\nnorth and east and evergreen forests in south and west.\nSuch nut-bearing trees as Lepidobalanus are abundant in the deciduous\nforests, while Cyclobalanopsitsh rive in the evergreen forest.\nBuckeye (Aesculus trubinata) is usually found in the wet valleys of\neastern Japan.\nIn traditional villages in the mountainous regions of Japan,\nthese kinds of nuts are used as an important staple food in the form\nof porridge and dumplings.\nThe acorn industry however involves a crucial technical process\nto remove the bitter tannic acid before the nut is palatable.\nIn this report various processes for removing the bitter acid from the\nnuts are discussed and a comparison is made of the proccesses used\nfor the nuts Lepidobalanus,C yclobalanopsiasn d Aesculus.\nThis information has been collected by the author who has\ninvestigated 20 cases of buckeye and 9 cases of acorn in various parts\nof Japan since 1974. He has concluded that there are two main\ntypes of acid removing process. One is the \"heating process\"\nwhich is invariably used in the case of buckeye and the acorns of\nLepidobaranus. In this heating process, there are two sub-types;\n\"heating\" and \"heating plus leaching\".\nAnother type of process is the \"pure leaching\" process which is used\nonly in the case of the acorns of Cyclobalanopsis. The reason why there are two types of acid removing process is due to the amount of\nacid in the nuts; it is high in buckeye and the acorns of Lepidobaranus\nbut low in those of Cyclobalanopsis.\nThe distribution of these two types of process coincides with\nthe main forest types of Japan.
