Since properly dehydrated\ntubers will keep indefinitely these products serve as both dietary\nstaples and as a reserve food. Further, being shrunken, concentrated,\nsmall in size and light in weight, these foodstuffs are\neasily transported. As a consequence, tuber-processing is an\nancient and important economic activity in rural household of\nthe Central Andean Highlands.\nMost of the literature on that topic has been based on data\nfrom the southern Central Andes, but several products, such as\ntoqosh, chuno and papa seca, in the northern Central Andes, are\nprocessed differently.
